After chatting with multiple people, I tried switching the Render Engine to the other options. The default now is EEVEE, and the classic one is Cycles. Both of those caused the app to close, but a 3rd (Workbench) worked. Only, I couldn't apply textures that way. I tried 2 older Blender versions ->

but those closed randomly on me too. The issue wound up being how I got the app. My version of Linux comes with a Discover app, that lets you install other apps that are compatible with your computer. For Blender, it offered two; one from Flatpak, the other wasn't. The Flatpak version included ->

a license and was a more recent version, while the other was missing a license & an older version. But Flatpak version was the one that kept crashing. I finally tried the other... and so far it seems to be working.
