If it *has* to be MS Office:
Last I checked it was still possible to 'downgrade' your M365 subscription to Basic without Copilot. Also cheaper.
Turn it off in File - Options - Copilot.
In File - Options - Save, change the default file location. Uncheck anything cloud-related.
Also, LibreOffice.
